Flavor and Aroma:
Fermented and aged for 6 months in mature French oak barrels, this chardonnay has a soft approach with noticeable, but balanced acidity on the finish. Aromas of crisp apples, lemon preserves, and wet stone lead to flavors of fresh pineapple and yellow plum, with a whisper of roasted hazelnut.
Residual Sugar:
0%
Aging Potential:
With proper cellaring this wine will age well for five to ten years.
Thoughts for Food:
Try this wine with more robust flavors, like lobster ravioli in a rich cream sauce or herb-roasted chicken with butternut squash.
Winemaker Comments:
Our most full-bodied white wine, this Chardonnay, results from a great vintage. It is full of flavors based on the season's pome fruits, such as apples and pears. There is also an added twist of caramelization that comes from the wood of a great cooper. I love the wines of Montagny and Mercurey and this Chardonnay is an ode to these fine white Burgandies. I believe a Meursault comparison is not far off.
